This cookie is heavy with molasses flavor, giving it a nice chewiness with an undercurrent of ginger. The slight bite of the ginger is tamed by the brown sugar and marshmallows, which both contribute to its softness. Throughout the cookie, there are bits of dehydrated marshmallows forn little pockets of crunch. This is then rolled in granulated sugar and bakes up into a sort of "crinkle" pattern with a slight crisp edge.
